About The Role

As Senior Butcher you will be part of the Gloucester Services Management team and work closely with the Farmshop managers and catering teams.

At the forefront of the site Butchery team, you will be responsible for the smooth running, and performance of the butchery counters and cutting room and using whole-animal butchery and artisan methods, you will use your butchery expertise to drive the team to prepare the finest quality meat selection not just on the motorway but anywhere.

Preparing meat from local farms you will tell our story, through the provenance and seasonality of our offer. You will deliver stand-out choice, presentation, and service to our Farmshop customers as well as supplying meat to our own Kitchens.

We are looking for someone who can build on our existing offer and lead our butchery to excellence, continuously improving the business with creative contributions, new ideas and methods and working alongside our central teams to create a truly unique offer that sets us apart.

You will be accountable for the food safety and compliance of the butchery department. Overseeing the team to produce the meat for our kitchens and produce our renowned sausages, burgers and more for our counters ensuring the quality and availability as our standard dictates.

About You

You will be a qualified butcher in nose to tail butchery or have equivalent experience as well as demonstrate passion for the traditional and artisan methods.

Good knowledge and understanding of the selection, preparation, packaging and display of meat for sale to consumer and commercial customers is required as well as good commercial acumen and ability to interpret and analyse data.

You will have previous experience managing a team and be a natural communicator. It is essential that you have the ability to delegate, coach and motivate individuals. Having an eye for the details is important to be able to maintain standards and ensure compliance with food safety regulations.
